ABC TV’s documentary, The War on Waste has put this hot topic on the national agenda, with a whole episode dedicated to the food industry and the staggering amount of waste that ends up in landfill each year. How can we contribute to solving this problem in our region – recycling, innovative technologies, sharing excess produce, composting? As an industry it is time to take this issue seriously. Come along to FAN’s next networking event to hear some remarkable stories about what is going on in our sector.
Keynote speaker, Dianne McGrath, RMIT Environmental Engineering PhD candidate will share the results of her leading research project, Watch My Waste (watchmywaste.com.au) – a national hospitality sector food waste study.
On the night we will also hear from representatives of the Ogilvie Group and Maravista Farm. Maravista Farm is stunning 250 hectare working macadamia farm in the Noosa Hinterland where the group have employed a full time resource, Mark Ormond to create a culinary garden of organic, locally grown produce for the Ogilvie Group venues which include Rickys, Locale Noosa, Wood Fire Grill and aromas noosa. We will be joined by David Jouy (General Manager of Rickys and Wood Fire Grill) and also Jules Santisis (Head Chef of aromas noosa) who will share the vision and their journey so far, including their current composting initiative which is in its early stages of development for the group.
You will also learn about an innovative local model for sharing excess food and organic waste from gardens and farms. Helen Andrews from Spare Harvest believes it does not make sense to waste these resources when there could be someone in your community who will use them.
